Structure académique

Semester 1 Practice and theory

Avoir une vision générale des techniques opérationnelles et de la gestion de la restauration et de l’Hôtellerie. Maîtriser et optimiser son image.

This module combines general culture, business management and exploration of the complex world of catering and hospitality.
All theoretical knowledge acquired (regulations, menu planning, equipment and materials, knowledge of food and beverage pairing, service and sales techniques, reception, reservations, housekeeping…) is then put to the test at the school’s Restaurant Vieux-Bois and at the Geneva Marriott Hotel, our partner hotel.

As your image is your main communication tool, we’ll have you take part in Image Workshops (Dress, hairstyling, make-up, ironing, waxing, ties…) supervised by professionals.

Semester 2 5-month internship

A paid internship in Switzerland to test your skills in a real-life situation.

Semester 3 Administration

Acquérir les connaissances en gestion et planification des activités d’un hôtel et d’un restaurant, savoir encadrer l’activité et maîtriser son développement.

This module covers all administrative subjects, from theory (accounting, Swiss law, political economy) to operating and control techniques for hotel reception and catering, including the organization of visits, conferences and events, as well as general culture and languages (English and German).

Semester 4 5-month internship

A paid internship in Switzerland to test your skills in a real-life situation.

Semester 5 Management, administration

Développer la vision globale et les techniques permettant d’assurer le succès économique, commercial et social d’une entreprise.

You’ll learn how to master the tools of management and apply them to the hotel and restaurant industry.

Human resources management, marketing, communication, financial management, technical management… the courses are clearly oriented towards management.

You’ll have to produce and defend a diploma thesis in front of experts, based on a concrete case study from the hotel or restaurant industry.

Semester 6 5-month internship

A paid internship* (Swiss or foreign) in a company to test your skills in a real-life situation.
